Tasting Notes
Nose - The nose opens with strong herbal notes, dominated by spearmint. It instantly reminds me of spearmint gum, with its crisp, refreshing aroma that fills your nose and lingers with a cool, minty essence.
Palate – The palate follows suit with a strong mint presence, much like the first chew of spearmint gum, delivering that same refreshing sensation. As it settles, sweet notes of brown sugar and a touch of allspice begin to emerge, balancing the mint with a warm, spicy sweetness.
Finish – The finish is medium in length, with the rye spice taking center stage, accompanied by a subtle hint of oak. The spice lingers leaving a dry finish.
Overall – Minty Fresh
Food Pairing - Gingerbread Cookies
Nav’s Personal Thoughts – High West is one of my favorite distilleries outside of Kentucky, mainly because I’m a huge fan of rye, and High West consistently delivers some of the best. The Bottled in Bond expression is a new release from them, and it stands out as refreshingly different from their other rye offerings. The mint note takes center stage throughout the entire experience, leaving a clean and refreshing finish on the palate. Overall, I really enjoyed this pour and would love to pair it with some gingerbread cookies this holiday season for a perfect seasonal match.
