Tasting Notes

  • Nose - Right off the bat, I’m getting stone fruits like cherry and plum, which give it a sweet and fruity start. As I sit with it however, the nose started to evolve, bringing out deeper notes of chocolate and a refreshing hint of mint. The nose is deep, bold, and incredibly inviting, making you want to dive right in.

  • Palate – The rich, deep notes from the nose carry over nicely to the palate. Chocolate and mint shine through again, joined by hints of clove and allspice, creating a sip that’s both layered and well-rounded. The balance between the sweetness, spice, and herbal notes make this an excellent sipping expereince.

  • Finish – The finish is medium in length and on the dry side, with lingering notes of oak and leather. It is a very satisfying finish to an excellent pour.

  • Overall – Excellent.

Nav’s Personal Thoughts – Man, Ohio is really showing up with this bottle from High Bank Distillery! Whiskey War Double Double Oaked took home Double Gold awards at the San Francisco World Spirits Competition in 2023 and 2024, and honestly, it’s well-deserved. This is one of those bottles that feels special. The complexity from finishing it in two separate oak barrels is just next level. This will be one of my go-to pours for the holiday season, something I’d only break out to share with my closest of friends. 

The flavors are rich, layered, and just so good—every sip makes me want to keep going back for more. For food pairing, I’d go with Chicken Mole. The rich and complex sauce would pair perfectly with this bourbon. Just thinking about it is making me drool.
